Carmen García and Manuel Gulias had the vision: to bring a genuine Mexican flavour to Madrid. He was a Galician who emigrated to Mexico as a young man; she brought the home kitchen and its recipes.
Nearly 20 years ago, in a tiny spot on Calle Fuentes, the first authentic taquería in Europe opened its doors. The same masa, the same salsas and the same slow-cooked guisos, made fresh every morning.
Carmen García and Manuel Gulias wanted to give Madrid something that didn't exist: a real taquería, not a Tex-Mex restaurant.
Manuel — Galician by birth, who moved to Mexico at a young age — and his wife Carmen set up a tiny taco bar on Calle Fuentes 11 with barely any tables: you ordered across the counter and the taquero kept serving you one after another until you were satisfied.
The idea was simple, and radical for Madrid at the time: bringing everyday Mexican cooking to the city — the kind from the corner stall and the market — with nixtamalized corn tortillas and recipes handed down from mothers and grandmothers. The success was such that a second location soon followed on Calle Hileras.
Manuel and Carmen open a tiny taco bar at Fuentes 11, right in the heart of the city. Just a counter, corn tortillas and home-cooked stews. The first authentic taquería in Europe.

The Gulias brothers, from Mexico City and based in Puebla, joined their parents behind the counter. The day-to-day is theirs: the trompo, the guisos, and keeping the tradition alive.
